Chimayo BBQ Tacos & Tortas is sure to impress you from the first glimpse at the menu! The restaurant looks to fuse traditional Mexican family recipes with a southern smoked barbecue twist to create street tacos that have never been experienced before. The owner of Chimayo, Kai Crowe, describes the restaurant’s style of cooking as having “no rules” and with the goal of serving creative blends that would not typically be experienced.
Chimayo smokes their meats in-house and offers an assortment of meat that is unmatched in Tahoe. On the menu, you can find tacos including lobster, filet mignon, bison, cauliflower and even cactus pads. To complement that, everything is made in house and from raw products that are often bought at the local farmers market. Make sure to stop by Chimayo’s booth at the 8th annual Sample the Sierra to experience bacon stuffed bacon over horchata French toast, finished with beer soaked walnuts and local white peaches.
